Configuring CRM to have Boomerang-like functionality?

We have users who want to use the Boomerang Outlook plugin (/, however we've finally gotten over our woes with the CRM plugin for Outlook crashing user's Outlook all the time, and are hesitant to introduce another plugin to compete with CRM.  Specifically, the common use case that Boomerang solves is having an email returned to their inbox after x days if the recipient doesn't reply.  Has anyone tackled this using just CRM?  We have Dynamics CRM 2016 (8.1) on premise.  Thanks for any help!

Create a workflow on the email entity that will populate a 'last inbound email date' on the contact (or account) entity.
When you email out, have a workflow clear the last inbound email field, then have a 5 day timeout start. at the end of the timeout, if the field is still blank, then notify the sender with an email.
